An alternative to toast, and sometimes called Cabbage Hash Browns - not surprising since they do taste like potatoes!

Ingredients
2 cups shredded cabbage
1/4 small yellow onion, thinly sliced
2 large eggs
1/2 tsp salt (add extra to your preferred taste)
1/2 tsp garlic powder
A pinch of ground black pepper
Oil for frying
Instructions
In a large bowl, whisk together eggs, garlic powder, black pepper and salt.
Add cabbage and onion to egg mixture and combine well
In a large skillet over medium-high heat, heat oil. Divide mixture into 4 patties in the pan and press with spatula to flatten. Cook until golden and tender, about 3 minutes per side.
Drain on paper towels to remove excess oil and enjoy!
