Breakfast Quesadillas
Quick and easy to make, yummy and so filling. Chose your own fillings and go vegan if you like!
I came up with this recipe a few months ago after watching a video on Facebook about how to use tortilla wraps in different ways to make meals. When I tried it I was pleasantly surprised at how yummy it was! Since then I’ve been making it with different combinations of fillings.

Ingredients
¼cup diced onions
¼ cup diced peppers
1 tsp vegetable oil
2 tortilla wraps (store bought)
2 eggs
4 slices wafer thin ham
½ cup grated cheddar
Salt & pepper to taste

Instructions
Lightly beat 2 eggs in a bowl with salt and pepper to taste, then set aside.
Pour oil into a frying pan on medium heat and sauté the onions and peppers for 1-2minutes.
Spread the ham evenly in the pan over the onions and peppers , then pour the egg mixture evenly over the ham.
Take 1 tortilla wrap and place it over the top. Use a flat spatula fork and press down to release an trapped air. Cook for 1 minute.
Using the spatula, flip the tortilla over – the egg and ham will now be on top.
Spread the cheese evenly across the top, then cover with the other tortilla – press with spatula fork to release any air.
Use the fork and flip over again, so now the top tortilla is at the bottom of the pan. Cook for 1 - 2 minutes.
Remove from the pan into a plate, and cut into 4 quarters.
Serve with a side of fresh avocado, and enjoy!
